Oatmeal Cookies

Directions

1In a medium bowl, cream together Sunflower Spread, white and brown sugar.

2Beats in eggs one at a time then stir in extract.

3Combine flour, baking soda, salt and cinnamon; stir into the creamed mixture. Mix in oats.

4Cover and chill dough for at least one hour.

5Preheat the oven to 375ºF.

6Grease cookie sheets with Sunflower Spread.

7Roll the dough into walnut sized balls and place two inches apart on cookie sheets.

8Flatten each cookie with a large fork dipped in sugar.

9Bake for eight to 10 minutes before transferring to a wire rack to cool completely.

1 cup white sugar

1 cup brown sugar, packed

2 eggs

1 tsp vanilla extract

2 cups all-purpose flour

1 tsp baking soda

1 tsp salt

1½ tsp ground cinnamon

2 cups quick cooking oats
