Scalloped Dolphin (Mahi-Mahi not Flipper!)

1Skin dolphin, rub with salt and lime juice and leave for 15 minutes.

2Wash off. Boil fish, flake and set aside.

3Melt Glow Spread and sauté green pepper, onion and mushrooms.

4Remove from fire and stir in flour.

5Blend until smooth. Add the stock and milk.

6Return to the fire and cook until thick and smooth.

7Take off the fire and stir in half of the grated cheese, add flaked fish, salt and pepper and sherry to taste.

8Place mixture in a baking dish greased with Glow Spread, cover with remainder of grated cheese, sprinkle with breadcrumbs and bake for about 30 minutes in a preheated oven at 350ºF. Enjoy!

2 ea green bell peppers, finely chopped

2 ea onions, sliced

1½ cup fish stock (or chicken stock using bouillon cube)

1½ cup milk

1½ cup cheese, grated

¾ cup breadcrumbs

½ cup sliced mushrooms

4 tbsp. flour
